Maamoul Baytoti with pistachio

Pistachio maamoul is a luxurious type of maamoul dessert that is popular in the Middle East and the Levant. It is famous for its distinctive filling consisting of chopped pistachios, and it is characterized by its circular or oval shape and its flavor derived from pistachios and sometimes cardamom.

The pistachio maamoul base consists of a mixture of flour, ghee (or butter), sugar and sometimes cardamom powder. As for the filling, it usually consists of chopped pistachios with sugar and sometimes a splash of blossom water to add a special flavor. Some other nuts may also be added to it, as desired.

The ingredients of the base are mixed and shaped into small balls, then a piece of dough is brought and slightly hollowed out in the middle to form a place for the filling. The filling is placed inside the dough and closed well, then it is formed in a circular or oval shape. Place the maamoul on a tray lined with butter paper and bake in a medium heat oven until golden.

After the maamoul has cooled down, it can be eaten with a cup of tea or Arabic coffee. Pistachio maamoul is a popular and delicious choice on occasions and celebrations such as Eid Al-Fitr and Eid Al-Adha.
