Date maamoul or date paste is usually prepared from basic ingredients such as flour, ghee or butter, sugar and dates. The flour is mixed with ghee, sugar and a little water to form a cohesive and easy-to-form dough. While the dates are mashed until they become soft and can be shaped easily, and some flavorings such as cardamom, cinnamon and vanilla are added to them, then they are formed in different shapes using wood or plastic molds designated for this purpose. After completing the formation of the maamoul, it is baked in a preheated oven at a moderate temperature until golden.
Ajwa tablets can be served cold or hot, and it is preferable to eat them with tea or Arabic coffee. In addition, the maamoul can be decorated with sesame, chopped almonds, or walnuts, as desired.
