Preparation journey: How to make the perfect "Wosh"?
The secret to the success of this coffee lies in the precision of preparation and balancing heat and time to preserve the aromatic flavor of cardamom and the thick foam:
1. Roasting and grinding with cardamom: the secret to the oriental flavor. Coffee beans are selected and roasted to a medium to dark roast. The key here is grinding whole roasted cardamom pods with the coffee beans at the same time, so that the aromatic oils of the cardamom blend with the very finely ground coffee.
2. Preparing the coffee pot: First, add cold water to the copper coffee pot (preferably cold to prolong the brewing time). Add sugar to taste at this stage, then add a heaped teaspoon of ground coffee with cardamom for each cup. Stir the ingredients well before placing the pot on the heat.
3. Slow cooking: Slow extraction. Place the cezve (coffee pot) over the lowest possible heat. Avoid stirring completely at this stage to prevent dispersing the foam that has begun to form on the surface. Slow cooking allows the coffee's deep flavors and the cardamom's warmth to be fully extracted.
4. Preserving the Foam and Serving: The crucial moment. As soon as the coffee starts to rise from the sides and before it reaches a full boil, remove it from the heat immediately. Pour a little of the foam into the cups, then return the pot to the heat for just two seconds, and very gently pour the rest of the coffee from the edge of the cup to keep the foam thick and perfect.
